Bhajiya

The no-fuss indian snack, made with chopped onions, potatoes, spinach, cauliflower or any other vegetable you can find in your fridge. Traditionally bhajiya is made in India during the monsoon season on a rainy day when no one can go out to buy supplies. It is nearly always accompanied by a steaming cup of chai. Bhajiya is one my favorite dishes to make with my family!
Recipe:
Ingredients (Serves 4)
1 onion sliced horizontally
1 potato sliced horizontally
2-3 green chili
1 cup chickpea flour
1/2 cup rice flour
2 teaspoonful salt
2 teaspoonful oil
3/4 cup water
black pepper enough to taste
Method:
Mix all ingredients in both flours and give it a semi-runny consistency.
Heat oil at medium heat.
Test oil by dropping a drop of flour to see if it rises.
Once oil is ready you can put 1 slice of potato dipped in batter
Deep fry for 1-2 min under low to medium heat.
Serve with ketchup or sweet chutney.
