Desi Eggs

These eggs are regular American eggs with a special Indian touch. It is a comfort food for my dad. After a long day at work all he craves are these Desi eggs. Every time my mom makes these eggs for my dad, he never fails to tell her that it was the highlight of his day!

 

Recipe: 

Ingredients (Serves 2)

  • 5 eggs

  • 1 teaspoon salt

  • 1 teaspoon blended green chili

  • 1 teaspoon blended ginger

  • 1/2 teaspoon Karshan Ghela Masala (you can find this readymade at an Indian store near you)

  • 1 & 1/2 teaspoon oil

  • cilantro (to garnish)

  • green onions (to garnish) 

Method:

  1. In a frying pan, put oil and then crack eggs 

  2. Do not mix yolk with the white of the egg 

  3. Leave the yolk with the white surrounding it like “sunny side up” 

  4. Sprinkle all the other ingredients on top of the egg

  5. Cook at medium heat for 3-5 minutes.  During this time, use a spoon to continuously place the hot oil on top of the eggs so it can cook the top layer. 

  6. Garnish with chopped cilantro and green onions

  • 15 minutes

Serving Instruction:

  • Serve immediately
