Cardamon/ Saffron Shrikhand

Shrikhand is a popular dessert that is made with a grand meal, especially at weddings. Made from strained yogurt this dessert has a creamy composition with a topping of nuts to give it a crispy twist. My sister indulges in this dessert and is sure to go to weddings just for this!


Recipe: 

Ingredients (Serves 8)

  • 2 lb whole milk yogurt

  • ¾ cup sugar

  • Green cardamom slices or crushed to garnish

Method

  1. Strain your yogurt (place all of your yogurt in a cheesecloth and then tie up like a pouch) for 18 to 24 hours

  2. During the time continuously undo the tied cheesecloth and tie again to gain maximum amount of water strained

  3. Press the cheesecloth under a weight to strain the remaining water

  4. Add sugar to the mixture

  5. Mix and stir until the yogurt is a smooth creamy texture

  6. Check sweetness and add more sugar if desired

  7. Add cardamom to garish or almond slices 

Preparation time:

  • 1 hour

Serving Instruction:

  • Serve immediately or freeze for later use
