Gulab Jamun is my dad’s favorite indian sweet. He wants it at every indian restaurant we go to. My grandma will make it at home on special occasions just for him. Gulab Jamun is a sweet treat soaked in a sugary syrup. With its rich taste Gulab Jamun is often a great dessert after a savory main course.
Recipe:
Ingredients (Serves 8-10)
Gulab jamun
2 cups powdered whole milk (Carnation brand)
7 tablespoon milk
1 tablespoon oil
1 tablespoon unsalted butter
1 tablespoon all purpose flour(White Lily or Gold Medal preferred)
2 tablespoon semolina
3 teaspoon water
1/4-1/2 teaspoon baking powder
Sugar Syrup
1/2 teaspoon rose water
1 & 1/2 cup granulated sugar
2 cups water
1 teaspoonful lemon juice
2-3 strands of saffron
Method:
Mix semolina with 3 teaspoon of water and leave on the side
Now, we will make the sugar water
Mix granulated sugar, water, and lime juice in a separate pan
Heat at medium heat until sugar has been dissolved and then put at high heat for approximately 2 minutes and then set aside
Add rose water and saffron strands and let mixture cool
In another bowl mix the powdered milk and baking powder to make the Gulab Jamun
Then dice up the butter and add to bowl
Mix the butter with fingers until evenly distributed with the milk powder
Then add in the semolina mixture and all purpose flour until evenly mixed
Now add milk slowly a teaspoon at a time until the dough has been mixed into one unit (do not press down on dough and mix lightly)
Set aside the dough for about 8-10 minutes and get oil ready for deep frying
Place oil on heat surface under low to medium heat
In the meantime you can lightly roll small amounts of dough into a rounded shape until surface is smooth (If needed use oil on the palm of your hands to make smooth, nothing should be sticking out)
Once all dough is rolled test oil with a small piece of dough (If the dough rises immediately then the oil is ready)
Put a few dough balls into oil and cook for 5-8 minutes under low to medium heat.
Dough balls should turn light brown (You can decide how light or brown you like them to be)
As the gulab jamun are being done heat up sugar syrup under low heat
When it is done you can place them in the warm syrup
Keep them soaked for about 30 minutes
They should looked really rounded and soft
They should look full and heavier
Take gulab jamun out of syrup and serve it warm.
