Nankathai

Nankathai is a cardamon flavored Gujarati tea biscuit. This shortbread is one of my great-grandma's favorite snacks. It is sweet, spicy and bitter which is all her favorite flavors in one. She loves to eat them warm from the oven along with a mid-morning or afternoon snack.


Recipe: 

Ingredients (Serves 10)

  • 1 cup Wondra flour

  • 1 cup whole wheat flour 

  • 1 cup all purpose flour

  • 2 sticks unsalted butter

  • 1/2 cup oil

  • 1/4 tsp baking powder

  • 3/4 cup sugar

  • blended cardamom and nutmeg (to taste)

  • slivered almonds


Method:

  1. Preheat oven to 250 degrees

  2. First mix butter and sugar until creamy and consistent. 

  3. Then add oil and the other ingredients. 

  4. Add decorations on cookies such as almonds or pistachios. 


Preparation time:

  • 45 minutes

  • Serve immediately or stored
