Doodhpak is a sweet Gujarati dish similar to the consistency of rice pudding. The ingredients are milk, rice, and sugar. You may also garnish with cardamom, saffron, dried almond, or pistachio slices. The sweet smell of doodhpak brings back memories of my grandfather's childhood. My great-grandma always made this sweet dessert even though she had been up working since the early hours of the morning. It was one of my grandpa's favorites! Although she no longer cooks, she still handed down good recipes for us to continue making for future generations.
Recipe:
Ingredients (Serves 4)
3 tablespoon Basmati Rice
½ gallon whole milk
¼ cup sugar (adjust as needed for sweetness)
⅛ teaspoon ground cardamom
Slivered almonds and pistachios to your liking
Method:
Boil milk until it comes to a slow boil
On the side, wet and wash the rice until it drains clear.
As the milk is boiling slowly at medium heat, add in the rice.
Keep stirring so the rice does not stick to the bottom.
Continue monitoring the rice until fully cooked.
Consistency should be semi-thick
When the rice is done, slowly add the sugar and cardamom powder.
Garnish with almonds and pistachios and serve cold or hot.
