Chicken Biryani

Biryani is a quintessential Indian potluck dish. Made with rice, vegetables, and whole host of aromatic spices, it is the ultimate one-pot meal that has hundreds of local variations in India. Each family adds their own little spice to it and in my family we add chicken. Chicken biryani has always been the go-to when we visit relatives.
Recipe:
Ingredients (Serves 6)
2 lbs chicken legs
3 ½ cups basmati rice
1 cup tamarind pulp
2-3 medium finely diced onions
2 tablespoon garlic paste
2 tablespoon ginger paste
6-10 green chilies
25-30 curry leaves
1 cup cucumber
1 cup oil
1 bunch culantro
1 packet Shan Malay Chicken Biryani Mix
cilantro (to garnish)
Method:
Sauté onions in oil until golden
Add garlic paste, ginger, curry leaves, and blended culantro
Mix for about 5 min under low to medium heat
Add chicken to the mixture
Stir until chicken turns golden (10 min on medium)
Add biryani mix, cucumber, green chilies, tamarind pulp, and water
Boil and cook for 10 min on low heat
In a different pot with boiling water stir 3 tablespoons of salt and rice (depends on your liking)
Boil rice until ¾ cooked and strain until there is no water left
Spread the rice and pour chicken mix on top cover and cook on low heat (10 min)
Mix before serving and garnish with cilantro
