Panama Chicken

Panama Chicken is a comfort food made by my grandpa when he felt like he missed home in Panama. This dish takes a lot of time in preparation, but my grandma would help him make it to perfection!
Recipe:
Ingredients (Serves 8)
12 chicken legs
2 to 3 star anise pieces
2 pieces cinnamon
2 bay leaves
1 dried nutmeg peel
4 yellow onions
2 to 3 red hot habanero pepper
1 bunch cilantro
2 teaspoons blended cumin
½ teaspoon turmeric
red pepper (according to spice level)
1 carton chicken broth
1 orange Goya packet
2 to 3 culantro leaves
2 small cans tomato sauce
4 teaspoon ginger
2 teaspoons Chicken Karsan Ghela Masala (packet)
2 teaspoon garlic
half a pack split pigeon peas
1 quart water
Method:
Set stove to low heat
Add star anise, cinnamon, dried nutmeg peel, and bay leaves sauté in oil
Then blend onion and habanero pepper and add into sauté oil.
Simmer until the onion is pretty much melted.
Add blended cilantro, split pigeon peas, blended cumin, turmeric, and red pepper.
Add all of the chicken broth and goya packet
Add culantro and tomato sauce
Add masala, ginger, and garlic
Then add 1 quart water
Add the chicken and let it simmer for 20 minutes. Then finally, cut culantro
Preparation time:
1-2 hours low heat

Serve immediately
