Fafda is a dish that is super tasty and I have a story for this dish. When I was 8, my family and I traveled to India and visited our family in a village close to Surat. On the way there, my grandma asked the driver to stop at a small stand by the road. We had no clue what was going on. My family got out of the car, and my grandma asked the vendor to make a plate for us. At that point I did not really know what was cooking! But soon enough, there it was, a beautiful golden yellow fafda! It was tasty!
Recipe:
Ingredients (Serves 4)
2 cups chickpea flour or besan flour
1 teaspoon carom (ajwain) seeds
1 teaspoon baking soda (kharo)
½ teaspoon salt
2 teaspoon oil
1 cup water
diced green chili
Method:
Mix flour and add oil
In a separate pot mix salt and baking soda at low heat
Mix for about 5 minutes
Then add flour and oil mixture
Mix well until the oil in uniform with the flour
Add water to flour to make a somewhat hard texture
Roll flour into a long roll
From the roll pinch off a little bit
Then using the heel of your hand spread into a flat board to give it a flat, oblong oval shape
Use a knife or anything sharp with an edge to lift the fafda off the board
Lastly, deep fry in oil under medium heat and serve with diced green chili
