Jalebi

This is an Indian sweet complemented with something savory such as fafda. Jalebi is popular at weddings or distributed at other special events such as the birth of a baby. This is my mom's favorite Indian dessert. She made sure it was served at her wedding.


Recipe: 

Ingredients (Serves 4)

  • 1/2 cup all purpose flour

  • 1 &1/4 tablespoonful corn flour

  • 1/8 teaspoonful turmeric powder

  • 1/4 cup plain whole milk yogurt

  • 1/4 cup water

  • 1/4 teaspoonful baking soda

  • 1/2 teaspoonful lemon juice

  • 1 teaspoonful oil

Sugar Syrup

  • 1/2 cup sugar

  • 1/4 cup water

  • 1/4 teaspoonful cardamom powder

  • 1/2 teaspoonful saffron strips

  • 1/2 teaspoonful lemon juice

Method:

  1. Mix all purpose flour, corn flour, and turmeric powder together 

  2. Then add yogurt and water (Please keep in mind to not have any lumps in batter. It must be uniform and smooth)

  3. Use whisk and keep stirring batter, or you may use KitchenAid to stir and mix batter so there are no lumps 

  4. Once ready you may pour the batter into a ziplock bag or even a squeeze bottle (With a ziplock bag make sure to cut a small hole at one corner depending on how thick you want the jalebi)

  5. For the sugar syrup, mix sugar and water and boil at medium heat in a separate pot until you get a string-like texture. (To get a string you have to test a drop of mix between your thumb and a finger and see if you see a thread firm between the two)

  6. If there is a thread then remove the pot from heat and add other ingredients

  7. In another separate pot place oil to deep fry jalebi with the temperature at medium heat

  8. Test oil by putting a drop of the batter in oil 

  9. If the drop floats then it’s ready. If it sinks, then it is not ready.

  10. When deep frying, set the pot with sugar on low heat. 

  11. Make jalebi in a circular pattern.

  12. When the jalebi is done, place it in sugar syrup for about 2 minutes.

  13. Then take out and ready to serve.
