Samosas are triangular pastries filled with spiced potatoes, peas, and sometimes meat or lentils. This appetizer is popular across South Asia and beyond. They are typically deep-fried until golden and crispy and enjoyed as a savory snack with chutneys or sauces. My grandma likes to take these to-go when traveling.
Recipe:
Ingredients (Serves 4)
Filling
1 diced onion
2 potatoes skinned
1/2 cup peas
1/2 cup diced carrots
1/2 cup corn
3 teaspoonful salt
1 teaspoonful garam masala
1 teaspoonful sugar
2 teaspoonful lemon juice
Outer shell ingredients
1 cup whole wheat flour
1 cup all purpose flour
1 & 1/2 teaspoonful salt
2 teaspoonful oil
Method:
Mix flour and knead into roti consistency.
Roll out and warm on stove top but overcook. Leave raw.
Let the roti cool.
Once cool cut roti in half and fill with vegetables.
Steam diced vegetables for 25 min medium heat.
Cool vegetables for at least 1-2 hours.
Add all the ingredients.
In a separate pot sauté diced onions until cooked.
Mix all ingredients together.
Fill samosas in triangular shape.
Deep fry until golden brown and serve with sweet and spicy chutney.
